General information:

1,3-Dihydroxyacetone is a naturally occurring ketose sugar. It has active physical and chemical properties, is prone to hygroscopic decomposition, and can participate in and catalyze many reactions. It is easily soluble in organic solvents such as water, ethanol, ether, and acetone. Its melting point is 75 – 80 °C, its water solubility is > 250 g/L (20 °C), it is stable at a pH of 6.0, and it requires low-temperature storage.
